Not reading up much on the storage side of things, I presumed it was like the older gen consoles where you swapped out the hard drive altogether, didn’t realise the ps5 had an extra slot inside.

I think your best bet is probably second hand. As the Slim is the default PS5 now I'm not sure how likely they'll be back. I mean nothings definite though.
That is a good point, you never know, as you say they did release the volcanic covers for the original and the Matt black slim was some time after the equivalent slim ones.Prices second-hand are bonkers unfortunately, people seem well-aware they haven't been available for over a year and are scalping accordingly. I do live in hope that they'll reappear at some point, they're still releasing new colours for the original consoles so there's always a chance.
Xbox One literally killed my love for gaming. After the fantastic Xbox OG and Xbox 360, the Xbone was such a letdown. Biggest buyers remorse I've ever had. Pretty much put me off gaming.It's been by far the worst generation of gaming for me. So little that interested me on the PS5.
