Does anyone know if it's possible to use 2 Ashes of War as a dual-wielder (1 per sword)?
Obviously my right hand ashes is controlled by L2 but how do I activate Left Hand?

I've just defeated Godrick and very thankful I found him much, much easier then Margit. With the summoning lady I found in the cells it made for a much easier fight and only took 3 goes. Unlike Margit who took nearer 100.

Yeah, you have to two hand the left handed weapon to activate that ashe of war.
 
No, left shoulder pad button + Y button dual wields the left handed weapon. You can then apply ashes of war, or buffs. Right shoulder pad button + Y dual wield right handed weapon. You can then apply ashes of war, or buffs separately for each weapon.

You can then of course to normal power standing both buffed weapons.

Finding it a bit odd that the DLC has no light beams to point the way.

Also regarding levelling up, is the DLC all about the Scadutree fragments and the other one (can't remember the name) or does the traditional runes spent on levels have an affect as well?

I imagine the answer is both.

But the DLC is more about the Scadutree fragments etc...

Pretty much, I went in with an already built up character where adding a stat point hardly did anything for me, but each level up from the scadutree fragments was ~10% damage increase and some defence on the sheet numbers, it does really add up by the time you're at the end as you get enough to level it a decent amount of times, I still had a few more levels to add after I'd cleared the final boss (would have made things a bit easier in hindsight).

Pretty sure I went in with around 7-800 damage and by the end was showing 1500+, so if in doubt just bail out of the area and try to find a few more fragments in the world.
 
A little late to this game, after remembering the first dark souls and how frustrated I got I put this off for so long

I'm about 15 hrs in so far and enjoying it, struggling to level up weapons though, I hear leveling weapons is more effective than leveling my character.

Any tips on getting plenty smithing stones and runes?

Once you get to the Roundtable Hold, you can unlock various smithing stones to buy from the Twin Maiden Husks once you've exchanged the relevant ball-bearings.

As for runes, farming the trolls in Limgrave early on is a good bet. In the later game, you want to be killing albinaurics at the Palace Approach Ledge Road site of grace near Moghwyn Palace.

I visited the twin maidens and found I already had one ball-bearings. I'll need to find out how to get others.
