How are you all getting on with GTAV? What kind of settings are you managing to run it with?
Pretty much maxed out, at a near stable 60 fps (haven't tried reducing anything to get a rock solid 60 fps as it runs pretty darn well).
What res? I am at 1440p and have dialled a few things back from ultra to very high and msaa to x2. FPS go anything from 30 to 100+ depending on the scene. With everything maxed out my vram seems to overheat. Happy with my settings now though

My trifire setup 295x2+290x while playing gta v does not keep stable gpu core clocks.
For the first few minutes they are stable, and then they start bouncing around.
No vrm or gpu cores throttling.
I have seen other users having the same problem.

@oiko for me the cards were overheating. The game really utilises them. Use afterburner to see if the 295x2 is reaching the 75 degree mark, it'll throttle.
I solved if by keeping my case open until I tidy up airflow.
@CaptainRAVE now that I've sorted out heat, 4K with almost all maxed out (except grass and no advanced features off, no MSAA, using morph AA) is a fantastic solid 60 FPS vsync.
Kudos to R* and ATi (yes, I refuse to change name!) for such great optimisation.
Recommended for 295x2 users, try the settings below in Afterburner. Helps keeps temps lower, which should reduce throttling.
There are three types of throttling to be aware of, it's important to know which one you're suffering from. MY Crossfire guide linked 'How To Make Sure Crossfire Is Working Correctly?', will help you discover which one you're suffering from by enabling an overlay.
1. Core throttling. This occurs when the temp hits 74c, the core clock will drop from 1018mhz to 9xx and fluctuate between these clocks. This can be solved by using the afterburner settings above, or by adding another fan to the rad.
2. VRM throttling. Much worse than core throttling, this will outright kick the card into 2D clock mode, 300/150. This can be solved by improving case airflow. Think about rad positioning, if you have the 295x2 dumping rad heat in the case, make it exhaust instead.
3. Powertune throttling. This can occur when the game is not under particular heavy load. Powertune gets tricked into thinking it can supply enough speed without having to run at maximum clocks. Things that can cause this, running low settings and then using Vsync and or an fps cap. Altering settings in game, Vsync, MSAA etc. You need to restart the game to cure it if this happens, thankfully it's rare. Best solution for this is to just increase the settings a little to make the gpu work harder.
