Soooo for someone that mostly uses the PC for gaming. I don't do many CPU stringent tasks, except a tiny amount of video editing for gaming clips. Should I look for a 2nd hand 5800x3d or buy a new 7600x?

It really depends, I guess if I was buying I would go 7600x as it offers upgrades in the future (although I would go 7800X as I just don't see 6 cores being a good buy as when you have other stuff in the background like discord, and various other apps those cores count). Unless you really are one of the top 1% though that wants the highest frame rates then I imagine a 5800x would do you fine for years. My 5900X storms anything I throw at it and my sons 3600x with a 165hz freesync monitor throws average framerates of 144 no problems at all and with freesync we never notice any drops. I dunno maybe I am too old but all these top chips are bloody excellent.
 
Do we know how these new processors will affect 3d software like Blender? I know a lot is done by the GPU, but some stuff like fluids I believe, are handled by the CPU. Or do we find out more today?

Just seeing if am5 is worth it for 3d dev stuff.
Your simulations, animations etc will be mostly CPU. High poly sub-d models may chug a lower end CPU. Rest is mostly GPU. Basically you need both ideally, but it also depends.

I model in MODO and the render preview is CPUbased currently. I'm slow at projects though so not sure I'll ever get the max out of a 7950 like I want, so might aim lower and upgrade later. Still on a 6700K so anything is an upgrade.

Reviews are out and I am not impressed. Little concerned tbh, running at 95C all the time is not something I am happy about.

No way I am updating from 5800x and 5900x that are in my systems.

Hmm. Doesn't beat 12900k in gaming, despite being what 10 months newer and being two nodes ahead, very disappointing, waste of sand.

Also, the 30 second BIOS load boot times (even after initial boot/memory training) are a huge turn off, why not delay to get this under control?

13900k looks set to slaughter this.
