I can only dream of getting my character to that sort of level /\
I've run into a little problem - I've stolen some kit and had to kill off a guard - now whenever I venture back into the towns I get arrested straight away - is there a way round this other than fighting? (I have only got 200 gold)

I'm not very good at it.
I've gone with a VERY evil character, cat-burgalar, pickpocket, assasin and archer. Have worked out the guard + jail/bounty system rather well.
If your arrested ANYTHING on you that was stolen (red hand icon) gets claimed but if you look around the prison when you get released you should be able to find the chest with your stuff in.
There are ways around this though - unless you serve time in jail anything you leave in a chest/crate/cupboard will be there when you get out. If the guards want you and you have stuff on you ALWAYS resist arrest. Keep running away from town and keep trying to wait. Once it lets you wait (once the guard has given up chase) head back into town - so long as you dont talk to a guard they wont bust you. Dump all your stuff in a chest then go pay the bounty.
In your case you have the problem that you killed a guard - they makes town guards act differently - they will approach and try and arrest you on sight. If you cant cover the bounty the only way to keep hold of stolen items is to lock them away in a house you own (yet to test if it works with houses I have the key to - killed a few home-owners along my travels and pocketed their keys). If you go to jail any containers you dont own are reset (as far as I know so far).
Another thing to note is if you join mage/fighters guild most of the items in guild houses are fair game and arent classes as stealing if you lift+sell them ("working" a house properly is much more rewarding however - with good security skills you can empty a house + pickpocket its owner without waking them - knowing when they get a visit from their lover/get up to do their own naughty deeds makes things much smoother tho.)
If you get stuck for things to do:
1) Travel along the yellow road out of the imperial city, it crosses a wide-ish river at one point, just after that (it might depend on level) theres 2 oblivion gates.
2) Kill a peasant completely at random, without a mission goal or provocation and have a nap.
3) Get arrested in the Imperial City.
Currently living my life as a vampire - the strength gains etc are handy but dodging sunlight can get to be a pain. As the vampirism grows the stronger you get but the quicker you die in the open in daylight
Might go get cured one day but currently gives me a definite edge (wait 48 hrs before fighting anything massively hard - gives you about 8 points strength and agility gain due to vampire effects).
It IS a very good game for playing in your own style. Make the games landmass about as big as morrowind and keep the current engine+AI and a killer of a MMORPG could well be done - would need a little of the crafting elements etc too though.
