Well for me I'd still go with Counterstrike. Although no single player, it's still the game I've spent years of my life on.
System Shock 2 is my favourite game of all time, and it's technically a shooter (well shooter-RPG hyrbid), but I'm gonna vote for the game that started it all (I know some people will say Wolf3D was the first FPS, but it had no multiplayer and simple block based levels) and still has the best FPS gameplay ever....
