Beautiful Widgets with Eclair theme (there's loads of themes for it), I've changed it slightly now to do without the background and changed some of the text to black.
To change the icons just open the actual Apps Organiser app, and then click labels.
Whichever one you want to replace, long press that label and then select Change Icon. You can then choose what you want to replace it with

It would be just a matter of exporting the apk and editing some files to allow the widgets to work with the custom ROMs.
I think its a tad more complicated than it appears for various reasons but I have no doubt we'll see them hovering around soon, especially if HTC are slower than XDA/Modaco at getting a working Froyo out for Desire.

The desktop version needs to be cleaned up around the middle a bit but it's not immediately obvious.

KoR, which icon pack or theme is that you're using? i want one of the icons
