I like to try and keep it clean, so it does the job for me

Im in same boat, would love to flash my desire, but worried ill mess it up lol.

Yep Handcent, rooting wil allow freeing up of more space, you should be able to get 100MB more easily via S-OFF then N1Table if you're going to use a non Sense ROM.
There were talks of an Oxygen only partition layout which gave the Desire 300MB of app storage so you'd not need Apps2SD+ at all. It's being worked on iirc.

Ok so one question regarding HandCent SMS. I got the fonts where I want them and the black theme, but the bar at the top and some of the buttons are showing as the horrible default blue colour! How did you make it black?
