For cleaning steering wheels its going to be a balance between trying not to strip the top coating from the leather, and being able to effectively clean what is usually pretty grubby.
This is my go to:
Colourlock Mild and Strong Leather Cleaner
Colourlock Leather Spirit
Leather cleaning Brush
'Scrubber' pad (search for skrubber dubber).
Leather protector of some kind (not conditioner).
Start with the mildest cleaner and brush, and if it doesn't clean it - move to something more aggressive. Leather brushes (or just a shoe brush will do) are good at working in the cleaner without stripping the surface. The scrubber pads are brilliant, but can start to strip the leather if you're too aggressive with them, but they do work very well.
The leather cleaning spirit will help break down some of the oils that will typically build up on the surface of a steering wheel, but again can be harsh so use sparingly.
An old or very dirty steering wheel will take several goes to clean it, you can do it over a period of weeks if you want rather than spend all day on it. Also, if you're using a brush to work in a cleaner - cover up the dashboard and interior with some towels as it will splatter everywhere.
There are some other good leather cleaning products I've used, I typically find a leather specific company has the better products - Dr Leather, LTT Leathercare. I think Colourlock sell a specific steering wheel kit, with some instructional videos - check our their site.
