This is what I have done. When OFF just means you will be on the public release then. I suspect all channels might get it straight away.

I'm scared about updating my Apple Watch. If it takes an age to do a smallish .1 update then how long for a big release. I might be stuck a whole day without it.

It was easily 20 minutes on the last update.

iOS 17 wasn't showing available at 6.10, so rebooted the phone and it showed up. Downloading now on my SE 5G.

Phone is updated and rebooted, started my Watch SE 10.0 upgrade off now, not sjure how long it will take.
