its amazing how much misinformation can come from blizzcon, and how many things dont get noticed when mentioned on panels etc.
1st they are removing meta gems from helms and the majority of sockets on gear.
To compensate for this JC will be able to craft much more powerful gems, possibly with random procs (bit like the legendary gems).

They will also be able to craft a wider selection of raid level rings, necks etc.
2nd while most enchants are being removed, enchanting will now be able to craft enchants based on what stats you want on your items.
Want a runspeed/stamina enchant? Craft one, want an intellect/reduce fall damage (not sure why) then craft one.
Whilst these are only examples the only thing which is guaranteed is that the cost for top end gems and enchants will sky rocket.
Enchanters will also be able to craft offhands/wands etc which was mentioned at blizzcon.
For inscription im assuming they will continue to be able to make trinkets, possibly staffs, offhands etc.
Armour will be the primary tanking stat in WoD and you will only find it on tanking gear. Im assuming stamina stacking will be more prevelant now with the item squish tanks will be more keen to increase their HP.
They were also talking about making stats more useful to all tanking classes rather than just some, haste for example is all but useless for warriors but verging on great for dk's / pallys.
Im interested to see what the ores / herbs will be. Im assuming they will make new ones, otherwise anyone who stockpiles TBC ingredients could be very rich indeed
