The baby beheading story does seem to be being reported by more news outlets now, but sky news say they asked for official confirmation from Israel 3 times and haven't had any.
Seems like the original source of the story may have been this Major General:
A baby's crushed crib lying outside a burnt-out home. Corpses strewn on streets. Body bags lined up on an outdoor basketball court. The stench of death everywhere.

I'm not clear exactly what the contention is, but I think essentially the claim is that 40 young children were killed in one settlement alone (among the other, older victims), and at least one of them was beheaded.
On the one hand it feels like there should be some more details by now and more journalists should have been able to see evidence and confirm themselves.... but on the other hand the information has come from somewhere and based on other things which are confirmed doesn't seem so unbelievable that that many were killed in one community and that at least one of the babies might appear to have been beheaded.
So overall seems likely to be essentially true to me, although details might not be quite as reported in some outlets based on the lack of confirmed information.
However, it seems like massive distraction that this is even a controversial issue or not... the evidence is pretty clear that horrendous atrocities were carried out on a wide scale and men, women, and children were all killed. E.g. this report:

Seems perverse for the focus to be on numbers of babies killed in a certain settlement (30 or 40? Was it young kids or babies etc), and whether any of them were beheaded or merely executed by firearms at close range. Although at the same time standards of factual accuracy are incredibly important especially at times like this, so hope the outlets which are reporting the events have reasonable evidence / good reason to trust reports.
