Two years with Android and still can't get it the way I really want

Some of these are very, very cool. My phone's flashed and running a custom ROM, but does anyone have a guide to changing themes, icons etc? Do you need to edit the ROM file and reflash, and if so how do you do it? Or have you guys just got really good with Launcher Pro?

UOT Kitchen has updated again. You can now cook themes with custom colour 'hooolm' style icons (glowing or not) and the hooolm style glowing battery
