BSplayer - Good video player with gesture controls
Dolphin browser - another alternative browser, really well laid out with some cool features. I tend to use Boat though as it's faster
ES file explorer - the best android file explorer, as well as viewing your sd card you can access your LAN and ftp.
GPS status - show off the notes super fast GPS
Poweramp - THE best music player for android
Quickpic - The stock android gallery is terrible, this is much better
TuneIn radio - online radio

And make sure you enable the Swype keyboard!

Get yourself samsung hub and also go on samsung apps there's exclusive apps and freebies for the Note and on hub if you look around there's ￡120 of movie and music vouchers, they used to be for purchase but afaik they still work for renting off samsung movies.

Installed most of them for now...

A few questions, if I may..
1. What bloat wear can i uninstall, any lists?

2. Recommended software for ripping music for my Note, or is it easy too transfer my entire iTunes libary?
Where do I put ripped music? Folder "usbstorage"

That's a list of installed apps/bloatware. I'd suggest freezing them first in Titanium backup to check it doesn't cause any issues. Then after a little while of normal use you can go back and delete them.

Another handy alternative is this: http://forum.xda-developers.com/showthread.php?t=1478918&highlight=lite+rom+creator. You can generate a little script that removes any apps you don't want. I found it very handy when i was switching around between ROMs, i could just get rid of the junk straight away.

How do I move the locations of "Phone, Contacts, S Memo, Messaging, Applications" on the very bottom of the screen.
They seem too be stuck, an I dont like the present locations!
 
The news is good, ICS being rolled out today for Galaxy Note, Europe first, German Notes are getting it as I type.
