Knubje, for you first Deer, go to the 1st Tower to the south. Run the first bit, walk when you're 3/4 the way there and crouch/prone the last 150m or so.
When you get into the tower, use the Deer call (just use one full call) every 60 seconds roughly. There's usually Deer about, so within 5 to 10 mins you should either pick up a call on the HM or see a Deer with the bino's. Stay couched when not using bino's. Keep calling in until it's close enough to shoot. Remember to load your gun well before you get to the tower.
For tracking, once I've found the first track I always walk. After finding the 2nd I'm crouched. You'll know the deer's near when the tracks get close together or you pick up it's call on the HM. It's taken me anywhere between 3 tracks and 10 tracks to find the deer. Wind direction is important to as if you're chasing a deer upwind of it, it will usually always smell you before you see it. If yoi find droppings, the smaller the radius of the circle on the HM, the closer it is. If you find tracks, foillow the exact line of the tracks as the HM provides a "best guess" rather than pinpoint accuracy.
Good luck.
