When gaming at 1440p would this card be handicapped by an overclocked 3570k compared to say an i7 7700k?

At 1440p probably not at 1080p maybe depending on the games.
What you will see with a i7 7700k is much better minimum FPS and slightly higher higher average FPS. This would make for smoother gameplay.

You will still get the GPU at 100% load on most games at 1440p, what overclock do you have on your 3570k? TBF 4.2Ghz and over should be fine anyway.
 
I currently have a reference 980Ti with an EK Titan Pascal water block, does anyone know if this will fit the 1080Ti FE?... I'm guessing not but thought I'd double check.

You have a Titan Pascal waterblock on your Maxwell 980Ti? Howd da hell?!? lol. I'm guessing u meant Maxwell titan block?

Because if you had a Pascal Titan block that would fit the 1080Ti no probs

Listening to the Digital Foundry's review, that implies that at 1080p this card is limited even with a 6700k.

yea that's why i said at 1080p maybe depending on the games. Digital foundry tested games which like better single core performance and not to mention 1080p or 720p you will see cpu bottlenecks with higher FPS (100FPS+) Anyway.
Moving up the resolution you offload more to the GPU taking some of the load off the CPU so 1440p will lessen the load off the CPU and even more so when moving to 4k or 2160p

Yea gibbo said he has god DPD picking them up late to ensure customers get thier cards on saturday. However you have to make sure you select saturday delivery and not the free version if that applies to you as you will end up getting your card on Monday.
