Stupid question, but when I go to download the SDK bundle I only have the option to download the Android Studio Manager. How do I get it?

Just follow the sakitec guide linked above. You need s-off though which may cost 25usd if the Firewater thing doesn't work. That will give you gpe, plus OTA updates will work.
 
I'm s-off and rooted. The issue is I there's not option to download the SDK bundle, just the Android Studio, unless i'm being an idiot and missing something obvious :confused:

Hard to say, just watch the sakitec m8 gpe YouTube video guide he has, it's step by step and you'll end up with kitkat 4.4.4 m8 gpe. It will then receive a regular OTA gpe 5.0.1 lollipop update.
Follow it to the letter (pausing the video where nessesary) and it will work, there's a section where you set the cid, to googl001 or whatever, set it to that.
If at any point something unexpected happens, stop.
 
Better to flash the 5.0.1 RUU IMO.

Would that still receive OTA updates though or would you need to refresh to get an updated version?

Edit : I guess the same principle applies, your just starting out with the latest android version. I wanted to test I could receive OTA updates.

Now my bottom speaker is making some weird buzzing noise and it sounds :confused:

Not sure if it's hardware issue since it only started happening since I flashed it to GPE.

Edit: Installed Cyanogenmod 12 and it's gone. So confused right now, but at least it's all working.

There's one thing with Lollipop that's annoying me already. There's no quick way to put your phone in/out of silent mode whilst you have media playing.
